Our recipe for Smoked Gouda Burgers will hit the spot whether you’re at home or on the road. Pan fry the burgers on the outdoor cooktop of your RV or throw it on a portable flat top grill.

Smoky Gouda Burgers

Ingredients:

  • 1 pound 85/15% ground beef, divided into 4 equal portions
  • 4 slices smoked Gouda cheese
  • 4 buns – we recommend Brioche or sesame seed
  • Bread & butter pickle chips
  • ½ cup French fried onions
  • 1/2 cup baby bella mushrooms, thinly diced
  • Worcestershire sauce, to taste
  • 2 Tbs butter
  • 1 Tbs olive oil
  • Salt & pepper to taste
  • Thousand Island dressing

Let’s get going!

  • Fire up your skillet or griddle to medium-high heat.
  • Prep the French fried onions first by placing them on a paper plate lined with a paper towel. Microwave for 15 seconds to make them hot and crispy. Set aside.
  • Roll each portion of ground beef into a ball and flatten evenly so each patty is uniformly about 1/3” thick. Season with salt and pepper.
  • Put the olive oil and butter directly onto the griddle or skillet. (If your grill has a grate, you’ll obviously want to skip this step.)
  • Add the patties to the hot surface and splash with Worcestershire sauce. Grill until cooked through, flipping occasionally – usually 4-6 minutes per side. If you use a meat thermometer to check for doneness (and we recommend doing so), go for 155-160 degrees for well-done.
  • Before removing from the griddle, top each burger with a slice of Gouda. Remove from heat and immediately add the sliced mushrooms to the remaining beef/butter/oil drippings. Saute under tender, 2-3 minutes.
  • While the mushrooms are sauteing, toast the inside of the buns. (To be honest, sometimes I remove the mushrooms from the pan drippings and place the buns on the skillet. The bread absorbs the remaining drippings and grills up nicely.)
  • Assemble: on a bun, place a cheeseburger and top with sweet pickle chips, mushrooms, French fried onions, and a drizzle of Thousand Island dressing. Yum!
